Mini Penne Rigate in a Creamy Broccoli Sauce

A vegetable based recipe, in which the strong taste of broccoli is sweetened by the delicate flavour of ricotta and ham.

350 g 
 broccoli
 
150 g  
 milk
 
100 ml  
 ham or prosciutto
 
100 g  
 fresh ricotta
 
50 g  
 Extra Virgin olive oil
 
1 tablespoon  
 salt

Boil the broccoli then blend in a food processor with a pinch of salt, a drizzle of oil and milk.

Slice the ham in 4cm long slices. Gently fry in a saucepan until slightly crispy.

Cook the Mini Penne in plenty of salted water, drain al dente and toss it with the broccoli cream. Add the ricotta and sauté in a saucepan for 2 minutes. Season to taste and garnish with the crispy ham.

The Chef's Tips


If you prefer a more delicate flavour, replace the broccoli with the same quantity of zucchini.
