 extra virgin olive oil
 
5 tablespoons  
 fresh basil sliced thin
 
10 leaves  
 ricotta cheese
 
1 cup  
 mascarpone cheese
 
1/2 cup  
 salt and black pepper to taste

BRING a large pot of water to a boil, add salt

COOK pasta according to package directions

COMBINE cherry tomatoes and olive oil to a large skillet, bring to a simmer

SEASON with salt and black pepper

COMBINE basil with Monti Iblei in a blender and puree until smooth, season with salt and black pepper

PLACE basil oil into a squeeze bottle and set aside

COMBINE ricotta and mascarpone in a small mixing bowl, season with salt and black pepper, also set aside

DRAIN pasta, add to sauce and toss to coat

TOP pasta with dollops of the cheese mixture, and drizzle with basil oil before serving
